why can't we just live day by day content with the knowledge that we're simply alive, and want for no higher truth, or purpose? why do we desire for more, when more will never be enough?

In all seriousness, it's good to want and seek more knowledge and wisdom (higher truth and purpose). We would be otherwise stagnant and a waste of space if we didn't want more....in order to grow.
It is our human nature to want/need to know purpose and higher truth to make us feel that our existence is something and for something.
Now if you're referring to material things, which I don't believe you are then it is futile to want more because you are right, it will never be enough.
